Avocado and Black Bean Salad

The combination of avocado and black beans is a real energy booster. It is also considered to be the ideal food for your muscles, because the nutrients go straight into your muscle tissue. Do not worry about the fat, it will most certainly trigger no health problems.

Ingredients:

  • 1 can black beans, rinsed and drained
  • 4 tbsp balsamic vinegar
  • 2 avocados, diced
  • ¼ cup red onion, diced
  • 1 cup grape tomato, sliced
  • ¼ cup cilantro, chopped
  • 1/2 cup corn (Organic)
  • 1 garlic clove (do not use garlic if you do not fancy its taste)
  • lime juice, olive oil, salt and pepper to taste

Preparation:

Rinse and drain the black beans. Add 4 tablespoons of balsamic vinegar, and stir well. Mix some avocado, diced red onion, chopped cilantro and tomato slices in another bowl. In a separate bowl mix lime juice and olive oil.

Combine the black bean and avocado mixtures together and pour the lime dressing over your salad. Add salt and pepper to taste. Mix well, so every bit is well covered with the dressing. Enjoy!
